Turkey Taco Meatballs

Oooowie this recipe is good! If you are getting bored…bored…boooorrreedd with your weeknight meals, I highly suggest adding Turkey Taco Meatballs to the menu for this week. You will not be disappointed. Lots of flavor for minimal effort that didn’t come out of a window! I found this recipe on a blog through a series of Pinterest clicks…which means, I unfortunately don’t know who to credit for the original creativity. I did tweak the recipe slightly to cut some “caloric corners.” For the cheese, I bought a block of reduced fat cheddar cheese and cut into small dice sizes cubes.

Ingredients
- 1 lb 93% lean ground turkey
- 1/2 cup green onions, chopped
- 2 whole eggs
- 1 tbsp chopped garlic
- 1 package taco seasoning
- 12 cubes 2% cheddar cheese
- cilantro, chopped optional garnish

Instructions
- Heat oven to 425.
- Beat eggs in a large bowl, add ground turkey, taco seasoning, green onions and garlic.
- Combine with hands. Form a ball of meat around a cube of cheese.
- Place on cookie sheet lined with foil. Bake for 8-10 minutes or until golden brown.
- Sprinkle with shredded cheese and chopped cilantro.

Each serving if prepared as listed above will yield an estimated 31 grams protein, 2 grams carbohydrates, 14 grams fat.

I added this meal to myfitnesspal for anyone that may be using the app. The only exception is I used regular cheese as block 2 % cheese isn’t available where I am.

I am gonna redo it. I figured out I had bought 85% lean turkey instead of 93%. The difference in fat content is a lot. I will put it back up ASAP.
Have you tried this with other seasonings? I do not care for taco seasoning but love meatballs. Any ideas for other flavorings???
One of my all time favorite seasonings is McCormick’s Montreal Seasoning. It could be good! I would walk around the seasonings aisle and see if anything strikes your fancy. Mrs. Dash has a Southwest Chili and Lime seasoning too!

Made these for diner tonight. Used 2 sticks of low fat peperjack cheese. They were great. Only problem I am running out of freezer room. Which will be emptied next week when I go deer hunting.
Made these a couple of weeks ago. I needed some extra flavor, so poured a can of enchilada sauce over them. When I reheat them, I break them up in bowl, and the cheesy middles ooz out into sauce, delicious!
