Bacon Wrapped Pork with Mango Salsa. Full of flavor and perfect after weight loss surgery!

This recipe is FULL of amazing flavors and packed with protein. While the original idea of this recipe came from Kraft® Food and Family Magazine, it’s been adapted by 3 or 4 ingredients to better fit a bariatric surgery diet.

Remember to take small bites, eat slowly and stop at the first sign of fullness after your bariatric surgery!

Turkey Bacon Wrapped Pork with Mango Salsa

Ingredients

  • 1 lb lean pork tenderloin, cut into 5 pieces
  • 5 slices turkey bacon
  • 1 mango, finely diced
  • 1 red bell pepper, finely diced
  • 1 lime, juiced
  • 4 green onions, chopped

Instructions

  • Wrap a slice of turkey bacon around each piece of pork tenderloin. Secure with a toothpick.
  • Heat a large non-stick skillet to medium high heat. Add pork and cook for about 5 minutes per side or until internal temp reads 145F.
  • While pork is cooking, prepare the salsa by combining the mango, red pepper, green onion and lime juice. Toss together and serve on top of pork.
