This recipe is hot off the press! (Or off the skillet…) meaning, we just ate it for dinner! At first glance, this recipe looks more intensive but really isn’t, especially for what you get in return. We made our steaks on the stovetop just as the original Kraft recipe called for. In hindsight, we’ve decided grilling is the best way to enjoy a steak. The avocado dressing, however, was a home run!

Sirloin Steak with Tomatillo Avocado Dressing

Ingredients

  • 3 small tomatillos (about 1/4 lb.)
  • 1/2 small onion, sliced
  • 1 avocado, fully ripened
  • 1/2 cup cilantro
  • 3 cloves garlic
  • 4 (4 oz) boneless beef sirloin steaks, 1/4 inch thick
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

Tomatillo Avocado Dressing

  • In a medium sized pot, bring 3 cups of water to a boil. Turn heat down to a low simmer. Add tomatillos and simmer for 15 minutes or until skin is softened.
  • Reserve 1/2 cup of hot water and drain tomatillos from remaining water. Place tomatillos and reserved water to a blender. Add avocado, cilantro, onion and garlic. Blend on high until smooth. Set aside.

Steak

  • Season both sides of steak with salt and pepper. Using an outdoor grill or grill pan on the stove, cook steaks 3-4 minutes per side or until desired doneness.
  • Remove from heat and top with tomatillo avocado dressing. *Optional, slice and sauté the unused half of onion for extra steak topping.

Notes

Fat grams likely lower as you will have excess dressing to use for other meals and not consuming all the fat listed above
*Fat is higher on this recipe due to avocado (21 grams for medium avocado) and sirloin steak (estimated 9 grams per steak)
