Simple Italian Chili – Bariatric Friendly

 

I have made this chili so many times, when I went to look for it on the blog the other day…I was shocked when I realized I’d never shared it on here!!!

I have made this for friends and family repeatedly. When I travel to visit family I try to offer to cook meals and this is a great one. Easy to put together in someone else’s kitchen and stick in the slow-cooker for the day while we go out and about. Everyone is happy when we get home and walk in the door to a delicious Italian dinner!

*To make this chili into single servings like shown in the video below – use a 1/3 measure cup and scoop into a silicone muffin pan. Cover and put in the freezer overnight. Remove from freezer and transfer to a gallon plastic bag. Heat chili chunks in the microwave for 2.5 minutes.

Each “chunk” provides 8 grams protein, 6 grams carbohydrate and 4 grams fat.

Ingredients

  • 1 lb Italian turkey sausage (casing removed if using links)
  • 1/2 onion, chopped
  • 1 (14 oz) can fire roasted diced tomatoes
  • 1 yellow or red bell pepper, diced
  • 1 (6 oz) can tomato paste
  • 1/2 tbsp dried basil
  • 1/2 tbsp dried oregano
  • shredded 2% mozzarella cheese for topping optional for topping

Instructions

  • Heat a skillet to medium high and spray with olive oil. Add turkey sausage and brown; drain if needed. Add onion and cook 2 more minutes.
  • Add to either slow cooker or large dutch oven. Add diced tomatoes, bell pepper and tomato paste. Mix well. Stir in herbs. If using slow cooker, cook on high for 3-4 hours or low for 6-7 hours. If using dutch oven, put burner to low and cook for 20-30 minutes.
  • Top with shredded cheese.

    I wasn’t going to even watch this series because I cook for my husband also. He is going away for 8 days so this will work out great. Who doesn’t like chili?
