You wouldn’t think adding fruit to you fajitas would be so amazing….but it seriously IS! I love the addition of the sweet fruit with the spicy taco chicken flavor. Mmmm mmm!!

Pepper and Peach Fajita Chicken

Ingredients

  • 1 lb boneless, skinless chicken breast Pound out thickness if needed (1/2 inch ideal)
  • 1 1/2 tsp fajita (or taco) seasoning
  • cooking spray
  • 1 1/2 cups green/red bell pepper strips
  • 1 medium peach, cut into strips

Instructions

  • Sprinkle both sides of chicken with fajita/taco seasoning. In a large skillet coated with cooking spray, cook chicken over medium heat for 12 to 14 minutes or until tender and no longer pink. Transfer to a plate; cover and keep warm.
  • Re-coat the skillet with cooking spray. Add bell pepper strips and cook until crisp-tender. Add peach slices and gently stir; cook for another 2 minutes. Spoon over chicken.

  1. I added some onion to the mix. And a little goat cheese. So yummy. I love this recipe. I made too much chicken. Leftovers won’t be a problem lol
