Bariatric friendly vegetable side dish

I really love the fresh flavor the orange provides in this somewhat basic green bean dish.

Let’s face it, side dishes often get the ‘back burner’ (pun intended) because the protein requires more focus! Something simple like changing the flavor profile to include a fresh citrus taste can take a boring vegetable to a welcomed change of pace!

Yes you can certainly do this with lemon which is often found as a flavor add to green beans. In fact I enjoy fresh lemon with a tablespoon of slivered almonds with green beans.

Even if you find yourself going for green beans often because it seems like the simple choice, add a little citrus to liven things up!

Orange Infused Green Beans

Ingredients

  • 1 lb fresh green beans
  • 1 small orange
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper

Instructions

  • Snap ends off green beans and rinse. Pat dry. Remove peel off orange and cut into strips.
  • Fill a medium pot with water and heat until boiling. Add green beans and orange peel. Boil for 7-8 minutes.
  • Drain green beans and season with salt and pepper. Squirt a small amount of fresh orange over beans and toss to combine all the flavors. Serve with lean protein.

  1. The flavor of the orange is subtle but good. I wasn’t sure whether I was supposed to eat the orange peels or just use them for color and flavor, so I skipped them. A nice way to liven up green beans!
