There are so many things to love about shrimp recipes, in my humble opinion.

It’s a lean protein – so it’s filling without the fat content.

It’s super fast to cook – hallelujah.

It’s very adaptable the kind of meal you add it too!

If you’ve had Gastric Sleeve, Gastric Bypass, Duodenal switch…or really any weight loss surgery procedure…shrimp recipes are wonderful thing! I imagine that’s why you are here :)

This recipe is a fast option for a traditional caesar salad without all the extra calories. I tossed bagged kale (ripped up with my clean hands first) with cole slaw mix and parmesan cheese. Then I cooked the shrimp with a simple lemon juice and salt and pepper mixture and added it with light Caesar dressing to the salad.

I loved how fresh tasting it all was!

Some patients do well with salads and some do not…take is slow and listen to your pouch! It’s always a good idea to focus on the shrimp the most anyway, the protein is what fills you up and keeps you full which helps fight snack attacks later!

Ingredients

  • 1 cup kale, shredded
  • 1 cup cole slaw mix
  • 2 tbsp shredded parmesan cheese
  • 1 lb large shrimp, peeled and deveined
  • 1/4 tsp each salt and pepper
  • 2 tbsp fresh lemon juice
  • 1/3 cup light Caesar dressing

Instructions

  • Shred kale and add to large bowl. Sprinkle with salt and massage for a minute (makes kale softer). Add cole slaw mix and parmesan cheese and toss.
  • Meanwhile, heat a skillet to medium-high heat. Season shrimp with salt and pepper and toss with lemon juice. Spray pan with cooking spray and add shrimp. Cook on each side approximately 2 minutes or until cooked through (no longer transparent).
  • Add shrimp to kale mix. Add light caesar dressing and toss to combine. Serve.
