As soon as you get the “okay” to have eggs again, it can be the most exciting meal after living on post-op shakes and liquids! However, it can be easy to get bored with the same scrambled egg every morning too.

If you’ve had Gastric Sleeve, Bypass, DS or any other WLS procedure, try this delicious spin on fast eggs for breakfast! I love the texture the crust brings the eggs. It’s also a very simple meal and doens’t add much time to the morning routine. Great if you want something tasty…but you really have to get going soon!

As always, it’s a big deal to take your time eating after surgery. Small bites and eating slowly are KEY to feeling great after your meal and not misreading when to stop. It’s so common that patients eat too fast or too big of bites and stop eating TOO SOON because they thought they were full. Low and behold just a few hours later they are hungry all over again!

I also have to say…many patients focus more on chewing, chewing, chewing and not enough on the size of the bite they took in the first place! Aim for bites the size of black beans (I know, so tiny!) and you will really settle in to what size of meal fits your pouch best. It’s different for each person, each surgery and even how long it’s been SINCE surgery!

  1. I’m going to try the eggs tomorrow…or maybe Sunday. Looks yummy.
    Great website. Beautiful pictures.

  2. These were so easy and fun! I was a little worried the cheese was over toasted, but once the egg cooked on top it was delicious. You were right, I should have gone a little thinner on my cheese becasue it is a strong flavor! Thank you Steph!

  3. I’m curious. It says no oil, but the cheese is full of grease, which helps the eggs cook, but still; grease. How does that work?

  4. @Polly sure there is fat content in the cheese. As a quick note the harder the cheese, the lower the fat content so it does help to use a parmesan compared to a mozzarella, for example. There is not additional oil in the recipe. You could find a fat free cheese but it will likely struggle to melt in which case you would skip the cheese and use a non-stick skillet or cooking spray for no oil. There will of course be the fat content of the egg itself unless you use egg whites. I like to look at the balance of the whole day so if this brought in more fat in the morning I would go for lean meats and skip cheeses later in the day. This blog talks about the pie chart I like to use for bariatric patients (scroll down a bit to see it).
