Barbecue Cheddar Meatballs

Ingredients
- 1 lb 93% lean ground beef
- 1 cup barbecue sauce lowest sugar available
- 1 tsp grill seasoning of choice
- 1 egg
- 1 tsp liquid smoke
- 1/3 cup reduced-fat shredded cheddar cheese

Instructions
- Heat oven to 350F.
- In a mixing bowl, combine all ingredients except 1/4 cup of barbecue sauce. Fold together until well mixed.
- Use a cookie scoop to form 1 inch meatballs and place in mini muffin pan. Bake for 18 minutes. Use a meat thermometer to ensure internal temperature has reached 160F.
- Remove from oven. Place in a serving dish and add reserved 1/4 cup barbecue sauce. Toss until lightly coated and serve.
