Instructions
  1. Heat oven to 350F.
  2. In a mixing bowl, combine all ingredients except 1/4 cup of barbecue sauce. Fold together until well mixed.
  3. Use a cookie scoop to form 1 inch meatballs and place in mini muffin pan. Bake for 18 minutes. Use a meat thermometer to ensure internal temperature has reached 160F.
  4. Remove from oven. Place in a serving dish and add reserved 1/4 cup barbecue sauce. Toss until lightly coated and serve.
