Pre-cooked sausage for a no cook bariatric meal

Okay, full disclosure, this is nearly a no cook meal because the meat itself was already cooked. I still count this is a no cook bariatric meal! However, I DID thread it on a skewer and grill it to heat it and bring out more flavor.

There is a great variety of pre-cooked chicken sausage on the market today. The brand I used in particular was from Aldi. In fact, I use grocery delivery and have my groceries delivered to my door. I know, it’s a tough life I live!

You can do this same recipe with several flavors or chicken sausage. You could also change what you thread on the skewer: bell peppers, onions, grape tomatoes. I used fresh pineapple this time and it was delicious but a word on that too.

You can use fresh pineapple and purchase pre-cut to save time or you can use canned if they are in their natural juices (not heavy syrup).

More chicken than pineapple

The grilled pineapple was a great addition to the chicken sausage but you’ll notice I used much more chicken than I did pineapple. This was for two reasons.

1 – Limit the carbohydrate intake from the pineapple

2- Focus on the filling protein more than the fruit

In my bariatric coaching I recommend eating two bites of protein to every one bite of vegetable. This allows you to fill up on protein that keeps you full longer. Instead of focusing on set portion sizes or gram counting, I like to focus on a ratio of 2:1 protein to vegetable then listen to fullness cues and stop at the first sign of satiety.

Ingredients

  • 4 links pre-cooked chicken sausage
  • 1 cup fresh pineapple chunks

Instructions

  • Heat an outdoor grill to medium high heat.
  • Cut chicken sausage links into 1 inches pieces. Cut pineapple if not already cut. Thread onto skewers using two chicken sausage to every one piece of pineapple.
  • Grill on each side for 4 minutes. Remove from heat, then from skewers and serve.
  • *Alternation: brush a low sugar barbecue sauce over skewers before grilling

Notes

Recommend pairing with a vegetable for a more rounded meal.
This recipe makes 4 servings. One serving is one link and approximately 1/4 cup of pineapple.
