Texture Matters

Funny enough, I create recipes all the time that I never write down because I forget. My style of cooking is toss a little of this and a little of that so I have had to train myself to take notes!

In particular, I make a lot of meatballs, meatloaf and burgers. I find these three genres of dinners are so similar it’s just tweaking the texture of the meat mixture based on what I’m making.

The trouble is when you go from memory and make meatballs with the texture of meatloaf. It doesn’t work!

Meatloaf can be a little more wet and moist because it bakes for 30-45 minutes depending on it’s size. So when I made these meatballs the first time, they mostly fell apart in the air fryer when I went to flip them. Great taste, terribly presentation!

Using the Air Fryer

Thanks to Amazon Prime Day 2019, I am a new Air Fryer user! While I still plan to create a post comparing it to using the Instant Pot® for today I’ll just share this successful recipe!

One of the features I do like most about the Air Fryer is how simple it is to clean. For the meatballs I sprayed olive oil lightly in the basket and again on the top of the meatballs. Between that and the non-stick coating of the basket, meatballs have never been so easy to clean!

I put my machine to 360 F for 14 minutes and flipped them at 7 minutes. Read the full recipe below.

Equipment

  • Air Fryer

Ingredients

  • 1 lb 93% lean ground beef
  • 1/2 cup reduced fat grated parmesan cheese
  • 1/2 cup 2% cheddar cheese shredded
  • 1 egg white
  • 1 tbsp grill seasoning of choice (ex: Montreal Steak®)
  • 1/4 cup barbecue sauce lowest sugar available

Instructions

  • Place all ingredients in a large mixing bowl. Use hands or a potato masher to incorporate well until mixture is well formed.
  • Use a cookie scoop (ice cream scoop or two spoons) to form meatballs together. I recommend small meatballs providing approximately 20 meatballs. Place meatballs in the basket of the air fryer as you go.
  • Turn air fryer to 360 F (182 C) and the time to 14 minutes. Use a spoon to gently turn over meatballs halfway through the cook time. Remove and serve when time is complete.

  1. There are 4 servings total and 3 meatballs per serving! That is just a reference for the nutrition information but not saying you have to limit yourself to three. Take small bites, pause in between bites and stop at the first sign of fullness
